I have a theory that, in order to be truly healthful, food should taste good. It's just hard for me to believe that munching away on a carrot stick or a piece of celery is benefiting me in any way. Not to say that I don't think that vegetables are healthy and that we should not try and get our 5-10 servings a day. I'm just saying that merely forcing something down because it's 'good for you', and suppressing a gag reflex as you do so, cannot be nourishing.
The Golden Autumn soup that Louisa and I made recently is chock-full of veggies; carrots, celery, pumpkin, sweet potato......there would have been parsnips in there too but yours truly forgot to bring them....no matter, we always end up tweeking the recipe a bit anyway, and Louisa added some plain potato for good measure. Although it involved a bit of chopping and blending, it was pretty easy to make and not too time consuming.
They look deceptively tasty, don't they? They're way better in the soup!
The end result was a hearty, thick soup that was nourishing to both the body and the soul. Complete with homemade french bread, this was one delicious lunch.
Delicious, and a treat for the eye!
